    Here is what you'll need! CHEESY EGG CUPS Servings: 12 INGREDIENTS 15 ounces frozen hash browns, thawed 1½ cups cheddar cheese, shredded 1 teaspoon salt ½ teaspoon pepper 1 tablespoon oil 8 eggs 3 slices bacon, cooked and crumbled Salt, to taste Pepper, to taste PREPARATION Preheat oven to 425°F/220°C. In a bowl, combine hash browns, cheese, salt, pepper, and oil. Pack into the bottom half of the cups of a greased muffin tin. Bake for 15-20 minutes, until golden brown. Boiled eggs are the easiest option. ► MY LINKS ► Instagram: http://instagram.com/chloe_t Blog: http://www.chloeting.com Twitter: http://twitter.com/chloe_ting Facebook: http://www.facebook.com/itschloeting Snapchat: chloe_ting ►Tofu Banana Bread (Sugar Free, Dairy Free, Plant Based) - AWESOME STUFF YO! ► Dry Ingredients: 1 1/2 cup of oat flour ( I just use my nutribullet to grind my oats up so that it is smooth like an oat meal/flour) 1/2 cup of lupin flour (this is not a very popular flour but it is so high in protein and fibre) 1 tps of Baking soda 1/2 tps of Salt (You can use whole wheat flour and all purpose flour if you prefer. It will raise better too. Mine is dense and moist) Wet ingredients: 3 Overripe Banana (around 330 grams) 200 g Silken Tofu (firm) 1/4 cup of Almond Milk 3 TBS of coconut oil 1/2 cup of maple syrup (i've only used 1/4 maple syrup) 1 tsp of vanilla extract Put all the wet ingredients in a food processor or blender for about a minute or so! Then make a well in your dry ingredients and mix it in slowly until it is nicely mixed! Put it in the oven for 30-35 minutes at 180 degrees celsius, 350 degrees fahrenheit. That's about it. remember to let it cool down before slicing it up. :D ►A standard chia seed pudding► 1/4 cup of chia seeds 1 cup of almond milk or your preferred milk 1 tps of vanilla extract some maple syrup if you want some sweetness cinnamon That's all! Leave it in the fridge for at least 6-8 hours. That's why it is best to make this at night too. For the ones that I made here. I used 1/4 cup of chia seeds for each fruit flavour with 1 cup of milk, for strawberries, I had about 80g of that and I added 3/4 cup of milk instead because it is quite a juicy fruit. ►Carrot cake Overnight Oats► 60g of carrots (i've added heaps, you can add half of that if you're not a fan of carrots) 1 cup of rolled oats 1 1/2 cup of almond milk Maple syrup (this is optional. I've added 1 TBS) 15 g of raisins (add more if you like it sweeter) 1 tsp of cinnamon powder 1 TBS of chia seeds 1 tsp of vanilla extract Put it in the fridge overnight. I like to top with blueberries and shredded coconut Avocado Egg Toast Save time and add protein to your avocado toast by topping it with precooked hardboiled eggs. Add lemon pepper and salt! Premade Smoothie Bags Pre-make your smoothies for the week – add whatever you like in the bags minus the liquid and you can make your smoothie super fast, just add liquid and blend! Waffle Sandwich Look for ‘healthier’ waffles at your local health food store and top with almond butter and bananas for a quick & tasty on the go breakfast Egg Bites Add egg whites and veggies to muffin pan and bake at 350 for 30-35 minutes or until cooked through. Keep them in the fridge and pop in the microwave for 45 seconds and they’re ready to eat. Bacon Sausage Baby Red Potatoes /quartered 1 Red Pepper /chopped 1 Yellow Onion /chopped Salt and Pepper 10 Eggs - beaten 1 Bag Shredded Cheese 1 Bunch Green Onions /sliced Flour Tortillas Parchment Paper In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool. In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool. In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl. Finally, reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan. Gather cooked ingredients - having let them all cool slightly. Additionally gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace. To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese. To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly. (If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling). Wrap up in parchment paper and repeat with remaining tortillas and ingredients, customizing the burritos to your liking. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month. To reheat: Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes. Remove from microwave and rest for one minute before unwrapping. Remove the paper towel, serve with hot sauce, salsa, or sour cream! Enjoy! To-Go Breakfast Quesadilla Serving 1 INGREDIENTS 2 breakfast sausage links 2 eggs, beaten Pinch of salt Pinch of black pepper 1 tablespoon green onions, chopped ⅓ cup cheddar cheese 1 large flour tortilla PREPARATION Heat nonstick frying pan on medium-high heat and cook sausages. Using the spatula, tear apart the sausage and create bite-size pieces. Add eggs, salt, pepper, and green onions and scramble until just cooked. Place scrambled eggs onto the middle of the large tortilla. From the top of the tortilla, fold down until it meets the middle of the circle. Follow the right end of the crease and bring the corner to meet the middle of the top fold. Repeat the steps until the tortilla becomes a hexagon. Heat pan on medium heat. Place the folded side down and heat until the tortilla has a golden brown color. Then flip. Wrap the quesadilla in aluminum foil and take it to go! Here is what you'll need! Servings 6 large muffins INGREDIENTS 3 cups flour 1 tablespoon sugar 1 tablespoon baking powder 1 teaspoon salt 7 eggs 1 ¼ cup buttermilk 3 tablespoons butter, melted 1 cup sour cream 1 cup bacon, cooked and chopped 1 cup green onion, chopped 1 ½ cup cheddar cheese, shredded, divided 6 cup large muffin tin PREPARATION 1. Preheat oven to 350˚F (175˚C). Grease a 6 cup large muffin tin. 2. In a large mixing bowl whisk together flour, sugar, baking powder and salt. Set aside. 3. In a medium mixing bowl whisk together 1 egg, buttermilk, melted butter, and sour cream. 4. To the dry ingredients, fold in the wet ingredients, cooked bacon, green onion and 1 ¼ cup of the cheddar cheese until just incorporated. 5. Using an ice cream scoop, fill each cup of a prepared large muffin tin with one large scoop. 6. Using a spoon, create a well in each of the scoops, pressing the batter up against the side of the pan, making sure it is deep enough to hold an egg. 7. Crack an egg into each of the wells of batter. 8. Using two spoons, drop small scoops of batter, first around the outside of the egg, building up the outer edge of the muffin and sealing in the egg whites and yolk, and finally over the top to cover the yolk. Be careful not to apply too much pressure while dropping above the yolk or it may break. 9. Top each muffin with remaining ¼ cup of cheddar cheese. 10. Bake in preheated oven for 25-30 minutes 11. Remove from oven and allow to set 5 minutes before removing from pan. 12. Best served warm. Store leftovers in the refrigerator. Enjoy! Music provided by Warner Chappell Inc. Used with permission
